1 Tbs. olive oil
1/2 small onion, thinly sliced
1 cloves garlic, minced (1 Tbs.)
3/4 cup (150 g) chickpeas, rinsed and drained
1 medium carrot, diced
1/8 (14 g ) cup dried currants
1/3 (45 g) cup dried Apricots
3.5 oz (100 g) canned chopped tomatoes

Herbs and Spices

1 tsp. ground turmeric
1 tsp. ground cinnamon
1 tsp. ground cumin
1/4 tsp. cayenne pepper or smoked Paprika
Salt and Pepper to taste
1 Tbs. finely chopped parsley for garnish

Saute the onion and garlic until onion slices are soft and starting to brown

Thoroughly wash the chickpeas under running water and drain

Stir in chickpeas, carrots, currants, and spices and stir, cook for 2 more minutes,

Add the tomatoes, bring to the boil then cover and simmer for 20 to 25 minutes, stirring occasionally and adding water if required.

Season with salt and pepper. and top with parsley.
