200 g fava (broad) beans, fresh, frozen or canned
70 g chopped Mushrooms
1 small onion
70 g sun dried tomatoes
70 g cooked or canned sweetcorn
2 tablespoons extra virgin olive oil

Herbs and Spices
salt and black pepper to taste

Sauté the chopped onion in the olive oil until soft, add the chopped mushroom and cook for a further 2 or 3 minutes.

Wash the beans under running water. drain and add them to the pot with the corn and sun dried tomatoes.

Cook for another 3-5 minutes or until the beans are soft. Adding some water if required

Add salt and black pepper to taste and serve
