1/4 cup uncooked lentils (55 g)
1/4 tbsp extra virgin olive oil
1 clove of garlic
1/4 onion (35g)
4 ounces canned crushed tomatoes (110 g)
1/3 cup coconut milk (50 g) (Can be replaced with water)
1 tsp curry powder
1/3 tsp ground ginger
1/3 tsp garlic powder
1/3 tsp turmeric powder
Salt and pepper to taste

Heat the olive oil in a frying pan, add the garlic and the onion (finely chopped) and cook them over medium-high heat until golden brown.

Add the tomatoes, coconut milk (or water) and spices and cook for about 5 minutes. Stir occasionally.

Add lentils, stir and cook for the time specified on the packaging, at least 15 or 20 minutes. Until they are soft.

Add salt and pepper to taste

Will store in a sealed container in the fridge for up to 5 days or freeze.
