1 cup vegetable stock
2 oz (60 g) Paella Rice (Or Short Grain Rice)
1 tbsp olive oil
1/3 red bell pepper seeded and chopped
1/3 yellow onion, diced
1 medium Tomato diced
1/2 Medium Carrot diced
1 clove garlic, minced
1 oz (30 g) mushrooms washed and chopped
2 oz (50 g) artichoke hearts canned, quartered
1 oz (25 g) frozen peas
2 oz (50 g) Chickpeas canned, quartered

Herbs and Spices
Packet of paella Mix or 1 pinch saffron threads and 1 tsp Paella coloring if available or 1 pinch saffron threads and 1/2 tsp Turmeric
1/2 tsp smoked paprika
Salt and Pepper to taste
1 lemon cut into wedges
Parsley to garnish

Saute the onion and garlic in the olive oil until the onions soften.

Add the carrot, bell pepper, tomato and mushrooms and cook for a further 3 or 4 minutes.

Wash the rice and chickpeas thoroughly under running water and drain

Add the rice and herbs and spices, stir until the rice is coated in the oil and spices.

Add the vegetable stock, artichoke hearts, and chickpeas, bring to the boil then reduce the heat and season with salt and pepper if required.

Cover and simmer until the rice is cooked, around 20 minutes.  about 1o minutes before the rice is ready add the frozen peas

Add more stock/water if required.

Garnish with Lemon wedges and parsley.
